This video explains what intelligence we need to have to attack the microbes by retaining desired sensory and nutrients. An intelligent way of hurdle technology means, we need to understand a few fundamental aspects of microbial behaviors in foods, in response to different applied stresses. Only then, we could relate these fundamentals in solving our food preservation problems. First, it is explained on how stress could affect the microbial cell. Where are the attacks by the stress or hurdle? Second, it is explained how microflora compete with each other in relation to secure nutrients, attachment sites and could alter the growing environment. These competing dynamics could be synergistic or antagonistic to food preservation. We need to understand what would happen to the microbial cell in a hostile environment. The third part explains the homeostasis, metabolic exhaust, stress reactions, stress shocked toxic proteins. Finally, microbial behavior is explained when they are injured by a stress or hurdle.
