They are North America's only freshwater member of the cod family. More often targeted in the winter months when they are more active Burbot can be caught year-round and are found in many lakes and and rivers throughout Washington, Idaho, and Montana. Often referred to as poor man's lobster Burbot has firm white flaky meat that is considered choice for edibility.
