How To Make Palak Ke Kofte | Easy Lauki Palak Kofta Recipe | नरम और टेस्टी पालक लौकी कोफ्ते Palak lauki ke kofte Portion servings: 5-6 pax Preparation time: 15 mins Cooking time: 30 mins Calories: 352 kcal per portion Lauki kofta Ingredients Lauki 1 pc Salt ½ tbsp Turmeric powder 1 tsp Lemon juice ½ tbsp Ajwain 1 tsp Red chilli powder 1 tsp Fennel seeds 1 tsp Coriander seeds crushed ½ tbsp Chopped coriander 1 tbsp Green chilli chopped 1 tbsp Kasoori methi ½ tbsp Besan 4 tbsp Oil for deep frying Palak gravy Ingredients Blanched palak 1 ½ cup Green garlic handful Ginger ½ inch Green chilli 2 pcs Oil 2 tbsp Jeera 1 tbsp Saunf ½ tbsp Hing 1 tsp Bayleaf 2 pcs Black cardamom 2 pcs Green cardamom 2 pcs Cloves 4-5 pcs Black pepper 5-6 pcs Garlic cloves 1 tbsp Onion chopped ½ cup Turmeric powder 1 tsp Red chilli powder ½ tbsp Coriander powder 1 tbsp Salt ½ tbsp Ginger & garlic paste 2 tbsp Tomatoes chopped ½ cup Water as required Kasoori methi 1 tbsp Fresh cream ¼ cup Butter 2 tbsp Laiki kofta method: Wash and clean the lauki. Peel and grate the lauki. Add salt, turmeric, lemon juice and mix it. Squeeze out some juice from the lauki mixture. Keep that aside for further use. Now take the mixture, add turmeric powder, ajwain, red chilli powder, fennel seeds, crushed coriander seeds, chopped coriander, chopped green chilli, kasoori methi and mix it well. Later add besan and mix it. Make a tight mixture out of it. Heat some oil for deep frying, make a round ball of the lauki mixture and deep fry them. Deep fry them on medium flame until they get golden brown crust. Remove and keep them aside. Palak lauki kofta method: Take a mixer jar, add green garlic, ginger, green chilli, blanched palak and make a fine paste of it. On another pan, heat oil, then add jeera, saunf, hing and let it crackle. Add bayleaf, black cardamom, green cardamom, cloves, black pepper and saute. Then add pounded ginger-garlic-green chilli and saute it. Add chopped onion and saute then till it gets golden brown. Then add turmeric powder, red chilli powder, coriander powder, salt and saute them. Add some water to avoid masala from getting burnt. Add ginger and garlic paste and cook them for 2 mins. Later add chopped tomatoes, cook till it gets mushy and separates oil. Then add palak mixture paste and some water. Add the lauki’s leftover juice. Cook it for 5-7 mins on medium flame and then add kasoori methi. Then add fresh cream and cook further. Add butter and give a good mix. Lastly add fried lauki kofta and cook for 2 more mins. Remove it in a serving plate, garnish it with fresh cream, rogan and ginger juliennes.
