An Indian Halwa recipe with Puri – a combination loved by many and perhaps one of the oldest dishes. HALWA PURI Ingredients ½ cup + 1 tbsp semolina ¼ cup + 1 tsp ghee 1 cup whole wheat flour Salt to taste 1¼ cups milk 7-8 raisins 3-4 almonds, halved 6-8 cashew nuts, halved A large pinch of saffron Oil for dipping and deep frying ½ cup sugar ¼ tsp green cardamom powder Slivered pistachios for garnish Method 1. In a large bowl, add whole wheat flour, semolina, 1 tsp ghee and salt. Mix well and add sufficient water and knead to a stiff dough. Cover with a damp muslin cloth and set aside for 10 minutes. 2. Heat milk in a pan. Let it come to a boil. 3. Meanwhile, heat remaining ghee in another pan. Add raisins, almonds and cashew nuts and sauté till golden brown. Drain on an absorbent paper. 4. In the same pan, add semolina and sauté for 1 minute. Add saffron and sauté till the semolina turns golden brown. 5. Add the hot milk in the semolina and mix continuously to avoid lumps. Cover and cook till the moisture is absorbed. 6. Meanwhile, heat sufficient oil in a kadai. 7. Add sugar in the semolina mixture and mix well. Cover and cook till the sugar dissolves. 8. Meanwhile, for making puris, take a small portion of the dough and shape it into a ball. Dip in oil and flatten slightly. Roll it into a small disc. 9. Add the roasted nuts and raisins in the semolina mixture and mix well. Add green cardamom powder and mix. Switch the heat off, cover and set aside. 10. Drop in the prepared puris in the hot oil and deep fry till golden brown and puffed. Drain on an absorbent paper. 11. Add the prepared halwa in a serving bowl.
