I'm making two delicious date bites recipes - a Pistachio Dark Chocolate with my homemade pistachio butter and the second one is a peanut butter version inspired by a classic candy bar like a Snickers. They taste indulgent, but they’re made with simple ingredients like dates, nuts, natural nut butters and dark chocolate. No baking, naturally sweetened, freezer-friendly, and perfect when you want something sweet without the sugar crash. Add pistachios and 2 tablespoons melted coconut oil to a blender or food processor. 2. Blend until smooth, scraping down the sides as needed. 3. Add additional oil gradually if needed for a creamy consistency. 4. Add a pinch of salt and blend again. (Set aside — you will likely have leftover pistachio butter.) Pistachio butter can be stored in a tightly sealed container at room temperature for up to a week. Store in the refrigerator for up to a month. Can be frozen as well. ⸻ Pistachio Dark Chocolate Date Bites Ingredients • 8–10 dates • ⅓ cup pistachio butter • ½ cup melted dark chocolate • Handful crushed pistachios • Flaky sea salt Instructions 1. Slice each date open and remove the pit. 2. Place on a parchment-lined baking sheet or plate. 3. Use the bottom of a glass or rolling pin to flatten each date to your desired thickness. 4. Spread pistachio butter over each flattened date. 5. Melt dark chocolate in the microwave in 20–30 second intervals, stirring until smooth. 6. Spoon chocolate over each bite. 7. Sprinkle with crushed pistachios and flaky sea salt. 8. Freeze until firm and easy to cut. 9. Slice and enjoy! Store in refrigerator or freezer. ⸻ Snickers-Style Peanut Butter Date Bites Ingredients • 20 Medjool dates, pitted • ¾ cup melted chocolate • ⅔ cup natural creamy peanut butter, stirred • ½ cup peanuts, coarsely chopped • Kosher or sea salt (optional) Instructions 1. Line a baking sheet with parchment paper. 2. Pit the dates and open them so the sticky centers face up. 3. Arrange the dates side by side on the parchment paper in a rough rectangle shape. 4. Cover with a second sheet of parchment paper and use a rolling pin or the back of a cup to press into an even layer, filling in gaps as you go. 5. Remove the top parchment sheet. 6. Spread peanut butter evenly over the date layer using an offset spatula if desired. 7. Melt chocolate in a microwave-safe bowl according to package directions. 8. Drizzle melted chocolate over the peanut butter and spread into an even layer. 9. Sprinkle chopped peanuts over the chocolate and gently press them in. 10. Sprinkle with kosher or sea salt if using. 11. Freeze uncovered until chocolate is firm, about 1 hour. 12. Once set, cut into bite-sized squares. Store in the refrigerator or freezer.
