Kousa warak enab or warak arish is one of Lebanese famous dish that everybody loves to eat specially the children they eat it with yogurt...here I will be using frozen grape leaves that I gather from our garden and keep it fresh in the freezer... I make it in big quantity to feed the whole family but you can adjust and make it less as you needed only.. MAHSHI KOUSA WARAK ENAB INGREDIENTS: 2 kilos of kousa or zucchini fresh 600 grms of frozen leaves with out water for the filling 1 kilo of ground beef 300 grms of round rice or Egyptian rice washed and soaked in roam temperature water until we prepare all 2 tsp salt or if you needed more you add later 1&1/2 tsp of sweet pepper 1 cup of fresh water if it's almost cooked we need to add 1 table spoon of butter 1/2 cup of lemon juice to prepare wash rinse and dry your kousa or zucchini.. for the grape leaves put it in a bowl add boiling water and cover it with plate for 10 minutes.. to empty the zucchini cut first the bottom and the upper part of zucchini..the one from the bottom where the flowers bloom throw it but the upper part after you cut the steam keep it we will use it .. now using a special thing to empty the zucchini I don't know how we call it but we can always find it in kitchen ware. press it on top where you cut the steam not really in the middle not also in the very side so that it won't broke.push it gently and begin turning it slowly controling not to make a hole nor to broke the zucchini.just continue turning it until you reach down but not too down to make a hole and slowly take out the middle and put it with the small pieces we remove upside the zucchini...now finished to empty the zucchini not to thin so that you can still eat the zucchini it will come out smal pieces leave it in another bowl we can cook it later as another menu... after we empty all the zucchini it's time to prepare our filling. to prepare for the filling throw the water from the rice we soak add the ground beef salt and sweet pepper mix to combine you see the mixture it dry add little by little the 1 cup of water to make sure we don't put so much water if you see the it is still dry you can add more water but not too that it becomes liquid it is difficult to fill the zucchini after after mixing all together now we begin to fill... I always begin with zucchini fill it until down but don't fill too much try to push gently just to make sure that you fill until the bottom but don't press also to much..the rice need space when it cooked it expands or increase its volume..if you fill and push to much when it cooks all your zucchini will be broken. for the leaves of grapes use plate it plastic tray it will be easy if it's your first time.. spread the grape leaves put the filling in the middle enough on how big or small your leaves fold it side by side and roll to close do fill until you finish and we arrange it in the casserole.. for the casserole we use the small pieces we cut out from the top of zucchini and the big piece we empty inside out it in the casserole with 1 table spoon of cooking oil stir fry for 1 minute only after arrange the zucchini and grape leaves.. I always begin with the grape leaves down coz it takes more time to cook than the zucchini.just arrange it all around after do the same with zucchini arrange it all around. when we arrange all add water to cook I use hot water but you can use normal.place a plate on top begin to cook in medium heat as soon as it boil let it for an hour after remove the plate add a piece of butter or 1 table spoon and a 1/2 cup of lemon juice now cover it with the cover of your casserole and let it boil in low fire until you eat or until you want to serve..this will be served hot with yogurt aside... thanks for the continuous support... bon appetit!!!
