It’s crispy on the outside and soft on the inside. Ingredients:, For the Tikki (Patties): 4 medium-sized potatoes (peeled and boiled) 1 cup boiled mixed vegetables (optional, but often added for extra flavor) 1 tablespoon cornflour or rice flour (helps in crispiness) optional 1 small onion, finely chopped (optional) 1-2 green chilies, finely chopped (optional for heat) 1 tablespoon ginger, grated or finely chopped 1 teaspoon garam masala 1 teaspoon cumin powder 1/2 teaspoon chili powder (adjust according to heat preference) Salt to taste Fresh coriander leaves, chopped (for garnish) 1 tablespoon lemon juice 2 tablespoons oil (for frying) For stuffing (Optional but recommended): 1 teaspoon cumin seeds 1 teaspoon garam masala 1 tablespoon chopped coriander leaves Salt to taste Instructions: Step 1: Preparing the Potatoes Boil the Potatoes: Peel and chop the potatoes into chunks. Boil them in water until soft and fork-tender (about 10-12 minutes). Drain the water and let them cool slightly. Mash the Potatoes: Mash the boiled potatoes thoroughly, ensuring no lumps remain. You can use a potato masher or a fork for this. Step 2: Prepare the Stuffing (Optional) Prepare the Pea Filling: Heat 1 tablespoon oil in a pan. Add 1 teaspoon cumin seeds and let them splutter. Then add the boiled and mashed peas, turmeric powder, garam masala, and salt. Stir everything well, and cook for 2-3 minutes. Remove from the heat and allow it to cool. This will be the stuffing for the tikkis. Step 3: Prepare the Tikki Mixture Mix the Mashed Potatoes: In a large mixing bowl, add the mashed potatoes, breadcrumbs, cornflour (or rice flour), finely chopped onion, green chilies, ginger, and chopped coriander leaves. Add Spices: Add garam masala, cumin powder, chili powder, and salt. Mix everything thoroughly, ensuring all the spices are evenly distributed. The mixture should be smooth and slightly sticky, but not too wet. Taste and Adjust: Taste the mixture and adjust the seasoning (salt, chili powder, or other spices) as per your preference. Step 4: Shaping the Tikkis Form Patties: Take small portions of the potato mixture and shape them into flat, round patties (tikkis) with your hands. If you’re using the pea stuffing, make a small indentation in the center of the patty and stuff it with a spoonful of the prepared pea mixture. Seal the edges to form a smooth round shape again. Coat the Tikkis (Optional): For extra crispiness, you can lightly coat the tikkis with some breadcrumbs or cornflour.
