Salt wasn’t just for seasoning in ancient Rome—it was currency. Roman soldiers were often paid in salt rations, giving rise to the word salarium—or salt money. A dependable soldier or worker was even said to be “worth their salt.” Today, near Marsala and Trapani, you can still witness the ancient art of salt harvesting, a tradition dating back to the first Phoenician settlers. Seawater is funneled into shallow pools, evaporating to leave behind glistening salt crystals.
