Join me today as I make two kinds of rocky road: Biscoff and Amaretti. Carole's Rocky Road recipes: Biscoff rocky road Ingredients 400g white chocolate 50g unsalted butter 125g Biscoff spread 100g mini marshmallows 250g Biscoff biscuits (crushed to large crumb) Place a large bowl over simmering water (don’t let the bowl touch the water) Add butter and white chocolate to the bowl and stir until melted and combined. Melt the Biscoff spread (a few seconds in the microwave) and add to the melted butter and chocolate. Remove from the heat and add in the crushed biscuits and marshmallows Pour into a 9”x9” foil tray (or lined baking tin) Place in fridge to set. Amaretti rocky road Ingredients 250g dark chocolate 150g milk chocolate 175g butter 4tbsp golden syrup 200g amaretti biscuits crushed 150g cherries chopped 100g mini marshmallows Place the butter, chocolate and golden syrup in a heavy based pan over a low heat and melt together Remove from heat and add crushed biscuits, cherries and marshmallows and combine Pour into a 9”x9” foil tray (or lined baking tin) Place in fridge to set.
