This is an easy version of the Goan Prawn Caldine curry. It tastes very good with Rice or Pav. Ingredients 500 gms Prawns ( Peeled,washed and deveined) 1 and 1/2 teaspoon turmeric powder 1 and 1/4 teaspoon salt 1 teaspoon coriander powder 3/4 teaspoon cumin powder 1/2 teaspoon garam masala powder 1 medium onion finely chopped 5 garlic cloves finely chopped 1 inch pc ginger finely chopped 3 to 4 green chillies slit cut 1 small tomato finely chopped 2 cups coconut milk 2 tablespoons white vinegar 5 tablespoons Oil Method In a bowl add 1 teaspoon turmeric powder, 1 teaspoon coriander powder, 3/4 teaspoon cumin powder, 1/2 teaspoon garam masala powder, 1/4 cup water and mix everything well to a wet thick paste. Keep aside Peel, wash and devein 500 gms Prawns. Marinate the Prawns in 1/2 teaspoon turmeric powder, 1/2 teaspoon salt and mix well. Keep aside. Place a wok or kadai on medium heat and add 5 tablespoons oil Add 1 medium onion finely chopped and fry for 3 to 4 minutes until translucent. Add 5 garlic cloves finely chopped, 1 inch pc ginger finely chopped, 3 to 4 green chillies slit cut and fry all of this for 3 to 4 minutes further Add the wet spice mix kept aside and fry for 1 minute Add 1 small tomato finely chopped and mix everything Turn the heat to low, cover and cook for 2 minutes Open and stir and mash all the tomatoes well Add 2 cups coconut milk, mix everything, increase the heat to medium and bring to a boil Cover and cook for 5 minutes Open and stir Add the marinated prawns to this and 3/4 teaspoon salt, stir everything Bring to a boil, cover and cook for further 5 minutes Open and give it a gentle stir, add 2 tablespoons white vinegar and stir Simmer for 2 minutes and remove from heat and enjoy
