This was the first dish I ever made by myself without my Mom's help. This is when the seed of my love for cooking was planted. I know “Salmon En Croute” sounds super advanced and complicated, but it's super easy! There are 4 easy components. Each component comes together to create this incredibly moist, buttery, crispy, creamy, delicate dish. Ahhh! Ya'll gotta try this! Equipment needed: Food processor Sauté pan Rolling pin Basting brush Cutting board/cutting knife Spatula or wooden spoon for sautéing spinach and onion A fork for whisking egg wash Preparation before you start cooking: (Preparation is key to successfully making this dish!) Preheat oven to 400 degrees F Let cream cheese sit out for 30 minutes before you start cooking (cut into large chunks and place in a medium sized bowl. Prepare a sheet pan with parchment paper Let frozen puff pastry sit out for 1-2 hours at room temperature before you start cooking Wash your spinach and basil Have 1/4 cup of all-purpose/unbleached flour prepared in a small bowl Part 1: Sautéed Spinach & Onion 2 Tablespoons of Olive Oil or Vegetable Oil 5oz of Fresh Spinach 1 Medium Red Onion sliced - Salt, Pepper, Garlic Powder to taste Part 2: Creamy Pesto Sauce 2 Cups of Fresh Basil - 1/4 cup of Grated Parmesan Cheese - 1/4 cup of Olive Oil 8oz of soft cream cheese Part 3: Egg Wash - 1 Egg 1 Tablespoon of Water Part 4: Salmon En Croute 2-4 Filets of Salmon - Season salmon with: Salt, Pepper, Garlic Powder, Cayenne Pepper, Fish Seasoning (a sprinkle of each on each filet of salmon) - 2 Tablespoons of Soft Butter Pesto cream cheese sauce Spinach and onion mix Egg wash - Puff Pastry Sheets (1 box of Pepperidge Farm Puff Pastry Sheets) Follow Safi's Home Kitchen on Instagram for super cool food pics: @safishomekitchen
