The milk will start to curdle. 3-Leave in the pot for 5 minutes. 4-Drain the curds in a fine sieve and squeeze the excess liquid then let it to cool completely. This is basically making ricotta. You can check my recipe at :- • How to Make Creamy Ricotta Cheese/ Re... or buy it ready from the market and squeeze the excess water. 2-Making pastry cream:- Ingredients for pastry cream : 1 cup whole milk or whipping cream( result more creamer keshta ) 1 1/2 Tbsp corn starch 1-2 Tbsp sugar -In small pot, mix milk, corn starch and sugar. Put on a very low heat and mix at all time until the mixture become thick then cook for few minutes. Keep in a deep dish to cool slightly. How to Make Keshta:- 1-Mix milk curds (ricotta ) and thick pastry cream 2-Cover and keep in the fridge to get cold completely. 3-Get it out from the fridge and mix a little . 4-Use it in many dessert dishes or enjoy it as is with fruits.
