Avakai Pickle or Avakaya Pachadi is the famous raw mango pickle from Andhra. It is packed with aroma and flavour from the mango itself which should be sour and raw, from the spices like mustard and fenugreek and the sesame seed oil. RECIPE OF ANDHRA MANGO PICKLE: Ingredients: 2 big raw mangoes weighing 900 g together Kashmiri red chilli powder 1 cup rock salt 1/2 cup fenugreek/ methi seeds 1 tbsp mustard powder 1/4 cup 1 tsp asafoetida powder/ hing Sesame seed oil 1.5 cups total Procedure and tips: The mangoes should be sour. Wash them well and dry them thoroughly. Remove the eye/ black dot-like portion in the mango. Cut into 2 Remove the seeds Cut the thread-like portion from all the pieces Chop into medium-sized pieces Spread the chopped pieces on a clean cotton cloth. NOW LET US PREPARE THE MASALA FOR THE MANGO PICKLE : In a wide bowl add 1 cup Kashmiri red chilli powder, rock salt 1/2 cup, fenugreek/ methi seeds 1 tbsp, mustard powder 1/4 cup and 1 tsp asafoetida powder/ hing. Toss and mix well. Now, add 1/2 cup sesame seed oil out of the total 1.5 cups of oil. Mix well. Now add the remaining oil. Add chopped and dried mangoes little by little. Mix well so that the masala coats the mango pieces. Our pickle is prepared. Store in clean glass jars. DO NOT STORE IN METAL UTENSILS. DO NOT KEEP A SPOON INSIDE THE PICKLE. THE PICKLE CAN GET SPOILED. Now, cover the mouth of the bottle with a clean cotton cloth and place the lid loosely on top. Keep untouched like this for 4 days. After 4 days open the bottle. You can see oil oozing on top. Close the lid and keep it aside for 15 days. After 15 days, the pickle is ready to be eaten with every meal. Enjoy yummy mango pickle with every meal. NOTE: This pickle has no tempering and oil is not heated. It stays good for at least a year if it is hygienically stored. Yet to be on the safe side, if you have made a large quantity, you can refrigerate it. Do read the following tips before that especially tip no 2. Yes please keep in the fridge after filling up small bottles with the pickle almost till the bottle is full. For a good shelf life of this pickle, please read these tips 1. Do not serve pickle directly from the bottle or jar. If you frequently open the jar the pickle frequently the flavour, taste and aroma of the pickle can worsen. So transfer a small quantity to a small cup or bottle and serve this 2. When the pickle fills the whole jar, very little air or moisture is present in the jar. But as you start using it and the quantity reduces, there is more space for air and moisture in the jar. Due to this moisture mango loses its freshness and microorganisms grow in the jar. So fill up small jars almost fully with the pickle and refrigerate. This way you will finish using one small jar at a time and the pickle in the remaining jars will remain fresh as they are not exposed to moisture and air 2.
