The key is to understand the type of analysis you are doing and the level of accuracy you need. If you only need global stress and stiffness distribution, a simpler mesh may be sufficient. If you need to capture local stress concentrations or complex deformations, a finer mesh may be necessary, but it is not always necessary to have two elements per thickness.
