COFFEE CAKE ☕️✨ Ingredients: 3/4 cup flour 3/4 cup brown sugar 1 1/2 teaspoons instant coffee 1/2 teaspoon cinnamon 1/4 teaspoon salt 6 tablespoons cold unsalted butter cut into cubes 1 cup sugar 1/3 cup melted unsalted butter 1/4 cup vegetable oil 1 teaspoon vanilla extract 2 room temperature eggs 1 room temperature egg white 1 3/4 cups flour (minutes 2 tablespoons) 2 tablespoons cornstarch 1 1/4 teaspoons baking powder 1/2 cup plain yogurt 1/4 cup hot brewed coffee 1 cup powdered sugar 1/2 teaspoon vanilla extract 2 tablespoons brewed coffee Directions: place flour, brown sugar, instant coffee, cinnamon, salt and cubed butter into a bowl and rub them all in together with your fingers to create a crumbly streusel then place it in the refrigerator whisk together sugar, melted butter, vegetable oil and vanilla extract for 2 minutes by hand add in eggs and egg white and whisk for 1 more minute soft in flour minus the 2 tablespoons and replaced with cornstarch, and baking powder and mix together until all the flour is incorporated add in yogurt and brewed coffee and mix together until batter comes together pour half of the batter into a lined baking dish sprinkle half of the streusel evenly over the batter pour the remaining batter on top of the streusel sprinkle the remaining streusel on top of the batter bake at 350F for 45 - 50 minutes while the cake is cooling, mix together powdered sugar, vanilla extract and brewed coffee to create an icing drizzle the icing over the cooled cake enjoy and happy baking! #coffeecake #coffee #cake #coffeelover #recipe
