They can lead to certain chronic diseases as well. Microgreens can be identified as a solution for these problems. 👉Microgreens are called as "vegetable confetti". They are immature shoots germinated from seeds of vegetables, grains or herbs. Mostly they are 1-3 inches in height. They have 3 edible components as true leaves, stems and pairs of cotyledon leaves. Normally harvesting is done after 7-14 days of seeding when the first pair of true leaves are observed, but some crops show a comparatively slow growth. Because of the above reason, harvesting period depends on the variety of microgreens. For example, 7-14 days - cabbage, radish 15-25 days - beetroot, carrot 15-30 days - basil, parsley 👉Baby greens and sprouts are different from microgreens. Sprouts are the smallest greens. Then the next stage is microgreens, they are larger than sprouts but smaller than baby greens. Microgreens are harvested without roots. So when harvesting, it is important to have a proper konwledge on harvesting period and harvesting techniques. 👉Seeds which can be used for the production of microgreens include beetroot, celery, carrot, lettuce, cabbage, radish, parsley, cress, broccoli, kale and basil. 👉Microgreens are rich in potassium. They contain some other minerals (Cu, Zn, Fe, Mn, Se, etc.), several vitamins (K, C, E), fiber and phytochemicals (carotenoids, phenolic compounds, antioxidants), but they have a low amount of calorie (20.22 - 53.43 kcal 100/g) and fat content (0.15 g - 0.66 g 100/g ). This nutrient amounts depend on the variety of microgreens. The amount of some nutrients in microgreens such as vitamins, minerals and carotenoids are higher than in mature greens. 👉Microgreens are good for skin and eye health, hormonal balance of the body and prevention of chronic diseases such as obesity, diabetes, cardiovascular diseases and certain cancers. 👉It can be cultivated in indoors, outdoors or protected conditions. Microgreens cultivation for home consumption is easy, but cultivating on a large scale is little bit difficult. At home, 2" - 3 1/2" deep containers and a media of coconut fiber, vermiculite, peat moss or a mixture of them can be used to cultivate microgreens. 👉Microgreens are widely used as salad dressings and garnishes in sandwiches, soups, curries, pasta and pizza.
