Recipe: This is how I made the financiers in this episode. I was inspired by Prue Leith’s coffee & walnut financiers recipe (https://thegreatbritishbakeoff.co.uk/...) Ingredients: 200g unsalted butter 120g ground almonds (almond flour/meal) 240g caster sugar (I used superfine sugar, sometimes called baker’s sugar) 80g all-purpose flour Zest of 1 lemon 5 large egg whites Fresh blueberries Method -Heat the oven to 450°F -Make the brown butter (beurre noisette). Melt the butter in a pan over a medium heat. Once melted, increase the heat and boil gently until the butter has turned golden brown and there is a ring of browned butter around the edge of the pan. Do not allow the butter to burn. Take care as it will spit and splatter a little. Remove the pan from the heat and pass the butter through a sieve lined with a sheet of paper towel. Leave any brown residue stuck to the bottom of the pan – don’t scrape it out. If you are grounding your own almonds, do so. In a bowl, combine the dry ingredients (including the lemon zest). I use a whisk to make sure there are no lumps. -Make a well in the centre of the dry mixture. Pour the egg whites into the well and whisk gently for 1 minute, until smooth. -Add the butter then whisk it in until you have a smooth, glossy batter. -Pour the mixture into a jug, then divide it equally between the molds you are using. -Bake the financiers for 5 minutes at 450F, then reduce the oven temperature to 400°F and bake for another 10 minutes, until risen and a skewer inserted into the centre comes out clean. -Remove from the oven and leave to cool in the mold for a few minutes, then remove the financiers from the molds and transfer them to a wire rack to cool completely. -Serve plain or dress up your financiers. Use your imagination, and taste buds to decide. Bonne appétit!
