Then freeze the filling and simply thaw overnight in the refrigerator when you're ready to use it 🍎 This filling has less sugar than many recipes, so the good flavor of the apples can really come through. Plus, partially pre-cooking the apples has so many benefits! First, pre-cooked apples will not sink as much while baking, thus avoiding the dreaded "crust gap" between the cooked crust and apples. Second, gently pre cooking your apples can cause them to release pectin, a natural thickener in fruit, which can prevent your apples from getting mushy. Third, partially pre-cooked apples are more likely to be done at the same time as the crust, so you won't have to burn the crust to get the apples fully cooked. Be sure to taste the apple filling after cooking on the stove! If it is too tart, add additional sugar until desired sweetness is achieved. Have questions? Let me know in the comments below. Note: I removed the lemon juice because it was a little too tart with the Granny Smith apples. If you use a sweeter apple, feel free to add 1 Tablespoon lemon juice. Ingredients: 3/4 cup (150 g) light brown sugar, packed 1/4 cup (30 g) all-purpose flour 1/2 tsp (2 g) Kosher salt 1/2 tsp (2 g) ground cinnamon Pinch of ground nutmeg 8-9 medium Granny Smith apples (about 3 lbs.), peeled and sliced 1/4 inch thick 1 tsp (4 g) vanilla extract 1/4 cup (55 g) water 1/4 cup (56 g) unsalted butter, cut into about 8 cubes Instructions: In a large braising pan, mix together brown sugar, flour, salt, cinnamon, and nutmeg until well combined. Add apples and vanilla. Toss gently to coat the apples. Add water and butter. Cook apples over medium heat, stirring frequently, until apples are just tender, about 20 minutes. Cool completely. Refrigerate in an air-tight container for up to 1 week. Freeze in an air-tight container or freezer bag for up to 3 months.
