Hello, I’m Harry. Welcome to my channel, Harry in the Wild. I’ve recently purchased a 2024 Can-Am Spyder RT Limited. This is my first camping trip on the trike. I’m staying at Bear Brook State Park, Allenstown, NH. You’ll join me on the first camping adventure, and I’ll share my first impressions after 1000 miles. On this trip we also make a meal, Jambalaya. Recipe is included below. After more miles, I’ll share something more comprehensive. Overall, the trike has been a huge success. Checking all the boxes to make my riding and camping a very enjoyable experience. At this early stage I recommend a trike and the Spyder RTL. Just because your camping doesn’t mean you have to eat crummy food. Camp Chicken Jambalaya (adapted from South Beach Quick & Easy Cookbook) A classic dish. Can be made with any combo of proteins. Cooks quickly. Great for a one pan meal in camp. Depending on how much you like your family and friends you can crank up the heat with more Cajun or Cayenne seasoning. Ingredients – Adjust portions to your needs Boneless skinless chicken breasts, bite-size pieces Extra virgin olive oil Scallions - Green and white parts chopped Green Bell pepper, chopped Garlic, minced Pre-cooked Rice Cajun Seasoning or Cayenne Pepper or Both! Black Pepper Chicken Broth Can Diced tomatoes and Green Chilis (like Rotel) Put the chicken, green peppers, garlic, Cajun seasoning, black pepper, scallions, dash olive oil in a freezer bag. Mix and let marinate. Add olive oil to a pan over medium heat. Add contents of bag to pan. Stir often until vegetables are softened. Add tomatoes and chilis with juice. Add chicken broth and rice. Bring to a boil and simmer until liquid is reduced to desired thickness.
