Dubai Chocolate Cheesecake - I learn about Dubai Chocolate from my son. He introduced me to this. I tried making it twice, it's super delicious. And I thought it's such a great idea to make it as a cheesecake topping. Well, when I searched, there is actually Dubai Chocolate Cheesecake. It turned about super delicious, everyone thought it's something new and trendy. I hope you're inspired and give it a try. Happy baking! Ingredients: 8 inch pan CRUST 140g biscuits (I used a biscuit similar to biscoff biscuits) 70g [1/4 cup + 1 tbsp] unsalted butter, melted CHEESECAKE 500g [2 1/4 cup] cream cheese, room temp 130g [1/2 cup + 2 tbsp] caster sugar 1/2 tsp salt 200g [3/4 cup + 2 tbsp] sour cream 150g [1/2 cup + 2 tbsp] heavy cream 3 large eggs OR 180g [3/4 cup] plain yogurt 20g [1.5 tbsp] lemon juice 35g [4 tbsp] cornstarch KUNAFA FILLINGS 100g [2 cups] kunafa, roasted 70g [1/2 cup] pistachio paste 30g [2 tbsp] caster sugar CHOCOLATE GANACHE 150g [1 cup] dark chocolate 150g [2/3 cup] whipping cream Deco: Pistachio cream (for web design art) Instructions: CRUST 1. In a food processor, add in the biscuit. 2. Pulse a few times until fine. 3. Add in the melted butter. Continue pulse until it comes together like wet sand. 4. Transfer onto a 8 inch pan, lined with parchment paper. 5. Store in freezer while preparing the next steps. CHEESECAKE 1. In a large mixing bowl, add cream cheese and sugar. 2. With an electric mixer, mix until creamy. 3. Add in the sour cream and salt. Continue mixing until well combined. 4. Add in the heavy cream, mix until combined. 5. Add in the eggs, one at a time. Continue mixing until well combined. 6. Squeeze in the lemon juice. 7. Sift in the corn starch. Whisk until combined. KUNAFA FILLINGS 1. In a source pan, add in the kunafa, sugar and pistachio paste. 2. Cook on medium heat until combined. 3. Transfer into a bowl and let it cool before use. 4. Add onto the chilled cheesecake. 5. Flatten and even the surface. Chocolate Ganache 1. In a mixing bowl, add the chocolate and cream. Make sure the chocolate submerge as much as possible. 2. Melt the chocolate over a double boiler for 5 minutes. Make sure the water is not boiling. 3. Stir until the white cream disappears. 4. Pour the ganache over the kunafa layer.
