Chicken Popti | चिकन पोपटी | How to make Chicken Popti | Raigad Chicken Popti Every year, when the temperature drops in January, locals of the Raigad district indulge in some interesting festivities known as the ‘popti’ party, that revolve around a dish comprising popti leaves (bhamburdi) and vaal shenga (Lima beans). This unique village-style barbeque, involving rarely-heard-of cooking techniques and interesting flavours, is slowly gaining popular among city-dwellers. In turn, many homestays in the district are organising popti parties for those seeking the experience, where - as the sun sets, and the winter chill takes over - people gather around this campfire, chatting and playing games, while awaiting their hot meal. All about the popti party The bhamburdi shrubs grow in abundance in various parts of the district in the months of January to April. And its leaves, along with the vaal shenga (also seasonal), form the two most important ingredients of the recipe. The popti leaves have a velvety texture and a flavour of their own which is imparted into the other ingredients cooking in the pot. The popti pot is considered to be a nutritious meal by the locals, because of the high fiber and high protein content. The vaal can also be substituted with fava beans or green peas, according to one's preference. The meal is enjoyed by both locals and the travellers for its fragrant smell and the flavour, courtesy the Bhamburdi leaves. “It has a mildly spicy taste, similar to carom seeds. The beans and the meat have a nice smoky flavour. Rarely do we get to eat such a meal in the city,” Setting up the 'popti' pot is a specialised task, and one left best to the local pot setters. Bhamburdi or Popti leaves are not eaten directly, but they have their own oils, in which the food cooks. They also have some medicinal properties and help in improvement of digestion and liver function." It's not just the taste, but also the ambiance that makes this plain, traditional cooking so appealing. Weekend travellers enjoy the open air and the rural surroundings which go well with the simmering hot pot. The annual fiestas have been a socialising tools for the locals for decades. “It is a delicacy for the locals. During these winter parties, their extended family and friends come over for merry making. Ingredients for Chicken Popti Recipe o Chicken , cut into 2 inch pieces on the bone 2 kgs o Ginger-garlic paste 4 tablespoons o Red chilli powder 2 tablespoon o Turmeric powder 1 teaspoon o Curd 1 cup o Rock Salt to taste o Coriander powder 2 tablespoon o Tandoori masala 1 tablespoon o Chicken Masala powder 1 tablespoon o Red Kashmiri chilli powder 1 tablespoon o Bhamroot / bhamburda leaves as required o Lima (pawta) beans 500 grams o Sea salt to taste o Fresh Pigeon pea pods (tuvar dana beans) 500 grams o Corn on the cob , thickly sliced 4 (optional) o Eggs 24 Method Step 1 Apply ginger-garlic paste, red chilli powder, turmeric powder, salt, cumin powder, garam masala powder, chicken masala, curd and coriander powder to the chicken. Mix well. Set aside to marinate for 15 minutes. Step 2 Place some bhamburda leaves at the base of an earthen pot. Arrange some pawta beans and tuvar beans in a layer over them and sprinkle sea salt. Step 3 Arrange half the chicken and raw eggs over the pawta beans and cover with some more bhamburda leaves. Step 4 Spread some more green pea pods. Place some more pawta beans and tuvar beans in a layer over them and sprinkle sea salt. Step 5 Spread some bhamburda leaves on the sides and arrange them tightly. Step 6 Add the remaining chicken and arrange the eggs carefully in the centre. Step 7 Add remaining pawta beans, tuvar beans and corn pieces (optional). Step 8 Sprinkle some sea salt, cover with bhamburda leaves. Step 9 Place the earthern pot upside down in a pit or base, cover with dried wood, twigs, hay and light them up. Step 10 Cook for 30-35 minutes. Move the burnt ashes aside, bring the matka out and set it upright immediately. Remove bhamburda leaves carefully and turn the contents out on a tray. Step 11 Peel the eggs. Arrange some chicken, some eggs, some of each vegetable on each serving plate and serve hot. Step 12 Enjoy your Popti Party!
