MASTER COOKBOOK RECIPE #147 ORANGE DATE NUT BREAD Ingredients: 1 large egg 3 Tbsp salted butter, room temperature 3/4 cup sugar 1 tsp vanilla extract 1 cup chopped dates 1/2 cup boiling water 1 orange, peeled and sliced 1 cup chopped pecans 2 cups all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt Instructions: Boil 1/2 cup water in the microwave, add dates, and set aside. Mix egg, butter, sugar, and vanilla. Blend dates with water and oranges using an immersion blender or regular blender. Stir into the mixture. Add combined soda, baking powder, salt, and flour; mix well. Fold in nuts. Pour into a greased loaf pan, filling up to three-quarters. Bake at 350°F for 1 hour. Test doneness with a skewer or toothpick—remove if clean. This is bread and not sweet like cake. If you want it to be sweeter, use 1 1/2 cups of sugar instead of 3/4 cup. And bake at 325°F.
