Honey Whole Wheat Bread 4-5 cups bread flour 2 tsp salt 2 packages dry yeast 1 cup water 1/2 cup honey 1/4 cup butter 1 cup cottage cheese 2 eggs 1 cup whole wheat flour 1/2 cup rolled oats In a large bowl, combine 2 cups bread flour, salt and yeast. Blend well. In be a saucepan combine the water, honey, butter and cottage cheese until warm. Butter does not need to melt completely. Add warm liquid and eggs to flour. Blend at a low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in the whole wheat flour, oats, and enough bread flour to make a soft dough. On a floured board knead for 10 minutes, until dough is smooth and elastic. Place in a greased bowl, cover, and let rise until doubled. Pinch down and divide in half. Let rest 10 minutes. Shape into loaves. Cover and rise 1 hour. Bake at 375 for 35-40 minutes.
