Now add: • Turmeric powder – 1 tsp • Kashmiri chilli powder – 2 tbsp • Coriander powder – 1 tbsp • Garam masala – 1 tbsp 👉 Mix with roasted spices and saute for another 2–3 mins. Set aside. ⸻ 🔸 Step 2: Grind the Paste Grind together: • Garlic – 12 cloves • Onion – ½ (medium) • Tomato – 1 (medium) • Coriander leaves – 1 handful • Mint leaves – 1 handful • Juice of 1 big lemon To this paste, add: • Chicken stock cube – 1 • Sunflower oil – ¼ cup • Salt – ½ tbsp (or as needed) • The sautéed masala from above (Optional: Add a pinch of red food color for rich look) 👉 Grind it all together. Marinate the chicken well with this and keep overnight in the fridge. ⸻ 🔸 Step 3: Fry the Chicken Heat ½ cup sunflower oil in a big pan. Place the marinated chicken and cook: • 15–20 mins on one side • 15 mins on the other side Chicken should be well cooked and browned. Take it out and keep aside. ⸻ 🔸 Step 4: Make the Stock Base To the same pan, add: • 1 chopped capsicum • Whole pepper – 1 tsp • Cardamom – 6 • Cloves – 5 • Cinnamon – 1 medium piece • Chicken stock cubes – 2 • 1 dried lemon 👉 Cook until the stock melts. Save half of this mix for layering later. ⸻ 🔸 Step 5: Make the Peri Peri Masala In another pan, add: • Sunflower oil – 1 tbsp • Leftover chicken marinade (a little) • Chilli flakes – 1 tbsp • Tomato ketchup – 2 tbsp 👉 Saute for 2–3 mins on high flame. Pour this peri peri masala over the fried chicken. ⸻ 🔸 Step 6: Layer the Mandi Now let’s assemble the mandi in layers! 1. Add half of the cooked basmati rice (boiled with salt). 2. Add half of the capsicum stock mix. 3. Add remaining rice on top. 4. Pour the rest of the capsicum mix. 5. Place 3 green chillies on top. 6. Add the peri peri chicken on top. (Optional step: Place a hot charcoal in a foil bowl, drizzle oil on it, and close the lid for smoky mandi effect) 👉 Cover and cook on low flame for 15 minutes (dum). ⸻ 🔸 Step 7: Serve & Enjoy! Take the chicken out. Mix the rice well.
