Today, we are making a classic Puerto Rican fritter, rellenos de papas (stuffed potato balls)! This popular Puerto Rican street food that you will often find in bakeries or at food kiosks in Puerto Rico is a delicious treat and very easy to make. They’re golden and crispy on the outside with a soft, velvety inner potato wall, and stuffed with a delicious ground meat filling. So, let’s get into it! ____________ Ingredients: potato dough • Roughly 1lb potatoes, peeled and cubed • 1 egg yolk • 1 tbsp corn starch, plus more for coating • 2 tbsp real butter • 1/2 tsp garlic powder • 1/2 tsp onion powder • salt to taste • black pepper to taste • 1 packet chicken bullion for the pot to boil potatoes Quick Picadillo: • 1/2 lb ground meat of choice • 1 tsp pimientos, chopped • 2 tsp sofrito • 2-3 tsp tomato sauce • 1/2 packet Goya Sazón • 1/2 packet chicken bouillon (sub for beef bouillon if using ground beef or pork) • 1/4 tsp oregano •1/4 tsp onion powder • 1/2 tsp garlic powder • black pepper and salt to taste, if needed QUICK TIPS: 📝 To prevent the relleno from exploding, make sure the filling is well-drained before putting it inside the dough. Make sure the potatoes are very well drained as well. Refrigerate the formed balls, uncovered, for about 30minutes before frying.
