My Vegan ZUCCHINI BREAD Recipe is unique because I made it using two types of flours (Spelt and Kamut). Zucchini Bread is not a common type of bread outside America. For a Bread made with a squash as one of the key ingredients, it's surprisingly tasty. My Zucchini Bread recipe is meant for Alkaline Vegans i.e. those living a gluten free alkaline lifestyle. Zucchini is also known as Courgette. The word Zucchini is an Italian word, while the word Courgette is a French word. Whatever you call it, this squash has won my heart. If you want your Zucchini Bread moist, don't squeeze out the water from the Zucchini after grating. If you like it dry, squeeze it out using a cheesecloth. I love my Zucchini Bread moist.
