Traditional Urug | Iraqi Style Spiced Meat Bread

This is a recipe that was inspired by our mother and one that was created because of popular demand. The rich flavors of this bread make it one of our favorite accompaniments to any meal. Traditionally, this authentic bread is cooked in a clay oven but you can easily make it at home with an ordinary oven and simple ingredients. Here is what you will need: DOUGH • 1 tbsp sugar • 2 tbsp yeast • 5 cups flour • 4 cups water (you can add up to a half cup more depending on the consistency of the dough) • 2 tsp olive oil SEASONING • 500g chopped beef** (about 1.1 pounds) 70% meat 30% fat **Urug typically calls for a mix of lamb and beef. • 2 medium onions • 1 cup green onion • 2 cups parsley • 1 tbsp turmeric • 1 tbsp salt • 1 tsp cumin NOTE *Preheat oven to 450°F/232°C If you tried to make the recipe, please feel free to drop a comment and let us know how you liked it.
