Easy way to make tasty Beetroot Palya that goes well with Rice or Chapathi. Narrated in Kannada with English subtitles. Ingredients: Oil - 2 Tbsp Mustard Seeds - 1 tsp Urad Dal/White Lentils - 1 tsp Curry Leaves - 8-10 Slit Green Chillies - 2 Chopped Onion - 1 medium-sized Chopped Beetroot - 2 medium-sized Salt - As per taste Jaggery - 1 to 2 tsp Grated Coconut - 1/4 Cup Lemon Juice - 1 tsp Coriander Leaves - 1 Tbsp Method: 1. Add 2 Tbsp Oil to a pan. Add 1 tsp Mustard Seeds. 2. Once the Mustard Seeds splutter, add 1 tsp Urad Dal. Add 8-10 Curry Leaves. After mixing for a while, I added 2 slit Green Chillies. 3. Once the Green Chillies are roasted, add 1 chopped medium-sized Onion. Add 1/4 tsp Turmeric Powder and roast the ingredients. 4. Once the Onions are roasted, add finely chopped 2 medium-sized Beetroot and mix well. Mix the chopped Beetroot with chopped Onion. Do not cook the Beetroot in a pressure cooker. If pressure-cooked, the Beetroot will lose its nutrients, and also the taste will suffer. 5. Add water till it immerses the chopped Beetroot. Once the water starts to boil, close the lid and allow the Beetroot to cook. Open the lid in intervals, mix once and allow the Beetroot to cook till some of the water content is absorbed. 6. Add Salt as per taste while the Beetroot is cooked, but the water content is still present. 7. Add 1-2 tsp Jaggery and mix well. To balance the taste I added Jaggery. 8. Add 1/4 Cup grated Coconut and mix well. Keep the stove in medium flame and mix till the water content disappears in the Palya. 9. Add 1 tsp Lemon Juice. Add 1 Tbsp Coriander Leaves and mix well. Adding Lemon Juice will help absorb the Iron content in the Beetroot. 10. Once the water content in the Palya/Sabji completely disappears, switch off the flame. This Palya/Sabji tastes good with Rice, Chapati, and also with Curd rice. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well.
