The written recipe below is for making rice on the stovetop. Ingredients: 1/3 cup oil (I used sunflower oil) 3 chicken legs or 1 lb any parts of the chicken 3 cups of jasmine rice (I used medium grain Egyptian rice in the video) 1 large yellow onion (sliced into half-moon shape) 1 lb. carrots cut into thin long pieces 4.5 cup hot water ( do not use cold water. It would change its taste) Salt as needed Directions: Put oil in a pot and warm it up. Salt the chicken and add it to the pot and sear it in medium heat. Turn them over so both sides would sear equally. Add onions and sauté them. Then add carrots and sauté all together until carrots are tender. Add all of the hot water. When it starts to boil close the lid and put it to low heat. After this point do not stir the mixture; it would crack the carrots. Let it boil in low heat 1 hour. If you have time you can leave it for 2 hours too. In that way, all of the ingredients would release their taste to the soup/broth and make rice more flavorful. It should boil in low heat because medium or hi heat would break the chicken and carrots apart. After an hour open the lid and check if some water was lost. If it was add some hot water. Add salt. It should taste a little bit salty because rice is going to absorb some salt. Wash and rinse rice. Put the stove to hi heat. When the soup starts boil hard, add rice. Carefully, get the chicken on the rice with a wooden spoon, so the rice would lay on carrots evenly, and it would be covered with soup completely. Then put the stove to medium heat and close the lid. Check from time to time if rice absorbed all the water. But do not stir. When it does, put the stove to warm. Wrap the lid with a paper towel and close the pot firmly. Let it rest for 20 minutes. A Paper towel would absorb extra water and make the rice fluffy. When it is done. Turn off the heat open the lid. Put rice on the serving plate, then carrots, and chicken on the top like in the video. Serve immediately. Note: You can make this rice with beef, lamb, goat, or turkey. Procedures are the same, but red meat takes longer to cook. Do not add meat for the VEGAN version. Thank you for taking the time and watching my videos. Hurma
