Do you want to know how the first cook went on the new Pit Boss Pro Series Combo Pellet Smoker and Gas Grill? If so, this is the same day as we assembled the unit, burned it in, and did our first cooking on it. We started off easy with Chicken Wings just to see how it was going to go. They are inexpensive and if I completely screwed it up, I wasn't out much money on the protein. I did 2 types of wings, one with a dry rub and one with a Jerk Seasoning marinade. After many trips to Jamaica, I fell in love with the smoked chicken with a good jerk seasoning. The problem was I left it on a bit too long and the jerk liquid marinade burned on the chicken wings.
