Today I will show you how to make a great Pasta and Potatoes Italian style. You can keep it as a purely vegetarian dish, or you can add a bit of pancetta (as I did...) to make it even tastier. Slice finely the shallot and the pancetta (if you use it in your version) and make them gently fry in extra-virgin olive oil; 2. Cut the potatoes in cube (small cubes are better!) and add them to the pan; 3. After a few minutes, add the peeled tomatoes, the rosemary and the crust of the Parmigiano Reggiano!; 4. Cover everything in water and let all simmer at low heat for 30-40 minutes; 5. Add more water as required and put the pasta in there; 6. Keep stirring for a few minutes and then...; 7. Serve and ENJOY!
