Recipe below! Financiers are my go to when I want a simple and easy, yet equally as delicious and satisfying tiny treat, and they pair perfectly with @durosecoffee ! Financiers - makes 12 125 grams of butter 125 grams of icing sugar 60 grams of almond flour 60 grams of hazelnut flour (or could just use almond flour) 50 grams of plain flour 1 tsp of salt - 4 grams 4 egg whites (about 120 - 130 grams) - room temp Tsp of vanilla extract Dash of almond extract -Melt butter in a pan over medium heat and continue to cook until it boils and turns golden browned and smells almost like caramel and nutty. Set aside. Combine the dry ingredients in a bowl, whisk in the room temp egg whites, then whisk in the browned butter, make sure to get the browned bits at the bottom of the pan. Scoop into a greased pan (I used a muffin/cupcake tin), about 80 grams in each. Add raspberries and sliced almonds, then bake in a preheated oven at 180C/350F till just starts to turn gold brown on the edges or a toothpick inserted comes out clean.
