Servings. • Makes 1 cup or 370g. Ingredients. • 1 stick (4½oz/125g) Butter Salted/Unsalted, softened. • 2 cups (8½oz/245g) Icing/Powdered Sugar, sieved. • 3-5 tablespoons of Brandy. Method. 1. Place the butter in a medium-sized bowl. 2. Beat with an electric hand whisk until light and creamy. 3. Add half the icing/powdered sugar. 4. When it’s thoroughly mixed in add the remaining icing sugar and mix again. 5. Add two tablespoons of brandy to taste and mix well. 6. Taste before adding more and add a little at a time mixing before tasting again. N.B. If you add too much brandy and the mixture curdles, then simply add more icing sugar until the mixture binds back together again. 7. Spoon the butter into a jar or dish, cover it, and store it in the fridge for up to 3 weeks. 8. Mmm Scrummy!!! Storage. • Store covered in the fridge for up to 3 weeks. • Can be frozen for up to 3 months.
