Could not find info anywhere about this so i decided to show you how to tame the bacon overlord griffin in ark eternal. as you can see in the video you just need to spawn a bacon overlord kill him and hope to spawn the bacon overlords daddy you can spawn the bacon overlord by killing lava golems or using the boss summoner. once you get bacon overlords daddy to spawn just attack him until he starts spawning his griffon minions which have a chance to spawn a tamable version i believe i have also gotten them to spawn by killing the robot theris that will spawn in the area as well.
