Then, we’ll take it up a notch with two variations: a bold Cilantro Serrano Aioli with a fresh, zesty kick and a smoky Chipotle Aioli that’s perfect for tacos, sandwiches, or even fries. Add the Dijon mustard, white wine vinegar, and salt. Pour in the avocado oil. Blend until you get a thick, creamy consistency. Ingredients for the Cilantro Serrano Aioli: 2-3 Serrano chiles, diced (adjust to your heat preference) 3 garlic cloves, minced 1/2 bunch cilantro, chopped Instructions: Add the diced Serrano chiles, minced garlic, and chopped cilantro to the mayonnaise base. Blend until smooth. Transfer the aioli to a container and refrigerate. Chipotle Aioli Ingredients for the Chipotle Aioli: 1 tbsp chipotle sauce (or more, to taste) 3 garlic cloves, minced Instructions: Prepare the mayonnaise base using the same process as above. Add the chipotle sauce and minced garlic to the mayonnaise base. Blend until fully combined. Transfer to a container and refrigerate.
