So refreshing and full of flavour as you can see it's very easy to make and I assure you it will conquer everyone's palat! Feel free to substitute the pasta with any shape you like if it's not easy for you to find orechiette! I hope you enjoy it :) Ingredients (4 servings): 400 gr Orecchiette 400 gr Cherry Tomatoes 150 gr Fresh Rocket Leaves (Arugula) 20 gr Vegan Parmesan Cheese 1 tbsp Extra Virgin Olive Oil 1 Garlic Clove (grated) 1/2 tsp Chili Flakes Salt Pepper Method: 1. In a pan pour olive oil, garlic and chili flakes. 2. Mix well then add the fresh tomatoes chopped in halves. Season with salt and pepper and cook on medioum heat for 10 minutes. 3. In the meantime boil the pasta in plenty of salted boiling water 1 minutes less the time indicated on the package. 4. Keep some of the cooking water for later. 5. Tear some fresh basil leaves in the tomatoes and mix again. 6. Once the pasta is cooked drain and add it to the tomato. 7. Add the rocket leaves too, give it a little stir, then add 2-3 table spoons of pasta water. 8. Finally add the grated vegan cheese, mix one more time and serve!
