This complete thali includes Aloo Baingan ki Sabzi, Dum Aloo, Urad Dal Poori, Kaddu ki Sabzi, and Boondi Raita – a perfect feast that brings together authentic North Indian flavors. Ingredients Aloo Baingan ki Sabzi Mustard oil – 1 tbsp Cumin seeds (Jeera) – 1 tsp Asafoetida (Hing) – ½ tsp Garlic (chopped) – 1 tbsp Ginger (chopped) – 1 tsp Green chili (chopped) – 1 tsp Potato (diced) – 2 pcs Brinjal (cut into wedges) – 5-6 pcs Turmeric powder – 1 tsp Red chili powder – 1 tsp Coriander powder – ½ tsp Salt – 1 tsp Tomato (chopped) – 2 pcs Dill leaves (chopped) – ½ cup Urad Dal Poori Urad dal (soaked) – ¼ cup Black pepper – 8-10 pcs Fennel seeds (Saunf) – 1 tsp Ginger – ½ inch Green chili – 1 pc Salt – ½ tsp Red chili powder – ½ tsp Turmeric powder – ¼ tsp Wheat flour – 2 cups Ghee – 1 tbsp Urad dal coarse paste Water – as required Oil – for frying Dum Aloo Ki Sabzi Oil – 1 tbsp Cumin seeds (Jeera) – 1 tsp Asafoetida (Hing) – ¼ tsp Green chili (chopped) – 1 tsp Dum Aloo Masala – 1 tbsp Water – as required Boiled potatoes – 3-4 pcs Salt – ½ tsp Amchur powder – 1 tbsp Coriander (chopped) – 1 tbsp Kaddu Ki Sabzi Mustard oil – 2 tbsp Fenugreek seeds (Methi) – ½ tsp Fennel seeds (Saunf) – 1 tsp Cumin seeds (Jeera) – 1 tsp Dry red chilies – 2 pcs Garlic (chopped) – 2 tsp Asafoetida (Hing) – ¼ tsp Green chili (chopped) – 1 tsp Salt – ½ tsp Turmeric powder – ½ tsp Red chili powder – ½ tsp Water – as required Sugar – 1 tsp Amchur powder – 1 tsp Boondi Raita Curd – 2 cups Black salt – a pinch Boondi – ½ cup Roasted cumin powder – ½ tsp Red chili powder – ½ tsp Method Aloo Baingan ki Sabzi Peel and dice potatoes into medium-sized cubes. Cut brinjals into wedges. Heat mustard oil in a pressure cooker until it smokes. Add cumin seeds and hing. Add garlic, ginger, and green chilies. Sauté until aromatic. Toss in potatoes and brinjal wedges, then add all dry spices and salt. Mix well, add chopped tomatoes, and pressure cook for one whistle on medium flame. Let the pressure release naturally. Open the lid and cook on high flame to reduce moisture. Add chopped dill leaves, mix well, and cook for another minute. Dum Aloo Boil potatoes until cooked but firm. Peel and roughly mash them. Heat oil in a pan, add cumin seeds, hing, and chopped green chilies. Add dum aloo masala and a little water to form a thick gravy. Add mashed potatoes, mix well, and season with salt and amchur powder. Cook on low flame for 5 minutes. Garnish with fresh coriander. Urad Dal Poori For Urad Dal Paste: Soak urad dal, then grind with black pepper, fennel, ginger, and green chili to make a coarse paste. For Dough: Mix wheat flour, salt, red chili powder, turmeric, and ghee. Add urad dal paste and knead into a soft dough. Making Pooris: Heat oil, roll dough into small rounds, and deep fry until golden brown. Kaddu ki Sabzi Cut pumpkin into cubes with the skin on. Heat mustard oil, add methi, saunf, jeera, and dry red chilies. Sauté garlic and green chilies, then add pumpkin cubes. Add salt, turmeric, red chili powder, and a little water. Cover and cook until soft. Add sugar and amchur powder, mix well, and cook for another minute. Boondi Raita Whisk curd until smooth. Add black salt, roasted cumin powder, and red chili powder. Mix in crispy boondi and let it sit for a few minutes to soften.
