🟢食材: 瑤柱(乾貝)150克 金華火腿100克 蝦米150克 鹹魚80克 蒜頭400克 紅蔥頭400克 新鮮辣椒150克 乾辣椒碎1湯匙 花生油適量 玫瑰露酒1湯匙 蠔油2湯匙 生抽2湯匙 雞粉2茶匙 鹽2茶匙 糖2茶匙 🟢步驟: 1️⃣ 將瑤柱洗淨浸軟,放少許薑和1湯匙玫瑰露酒拌勻。加入火腿中火蒸45分鐘,蒸好的瑤柱撕碎,火腿切碎備用。 2️⃣ 將蒜頭切碎或攪碎,紅蔥頭切碎或攪碎,蝦米切碎或舂碎,辣椒切碎,鹹魚去骨切碎。 3️⃣ 用適量的花生油加熱,油溫約150度。加入紅蔥頭、蒜頭、蝦米、瑤柱、火腿、新鮮辣椒和鹹魚,炒香後加入乾辣椒碎,繼續炒約3分鐘。 4️⃣ 加入雞粉、蠔油、鹽、糖和生抽,繼續炒勻,待調味料均勻滲透至食材中,關火。 5️⃣ 將炒好的XO醬待涼後裝入已消毒及烘乾的玻璃瓶中。 ♦備註:📌可依個人口味調整調味料的份量。 🟢Ingredients: Dried Scallops - 150g Jinhua Ham♦¹ - 100g Dried Shrimp - 150g Salted Fish - 80g Garlic - 400g Shallots - 400g Fresh Chili Peppers - 150g Crushed Dried Chili - 1 tablespoon Peanut Oil - as needed Mei Kuei Lu Chew♦² (Chinese wine) - 1 tablespoon Oyster Sauce - 2 tablespoons Soy Sauce - 2 tablespoons Chicken Stock Powder - 2 teaspoons Salt - 2 teaspoons Sugar - 2 teaspoons ♦¹Jinhua ham is a type of specialty dry-cured ham named after the city of Jinhua, where it is produced, in Zhejiang province, China. ♦²Mei Kuei Lu Chiew is a type of Chinese wine which spirit distilled from fermented sorghum and infused with rose flowers, often used in Cantonese style cooking as seasoning. 🟢Steps: 1️⃣ Rinse the dried scallops and soak them until soft. Mix with a small amount of ginger and 1 tablespoon of Mei Kuei Lu Chiew. Steam with the Jinhua ham over medium heat for 45 minutes. Shred the steamed scallops and dice the ham. 2️⃣ Chop or grind the garlic, shallots, dried shrimp, fresh chili peppers, Salted fish deboned and chopped into small pieces. 3️⃣ Heat peanut oil in a wok until it reaches about 150°C. Stir-fry the shallots, garlic, dried shrimp, scallops, ham, fresh chili peppers, and salted fish until fragrant. Add the crushed dried chili and continue to stir-fry for about 3 minutes. 4️⃣ Add the chicken powder, oyster sauce, soy sauce, salt, and sugar. Stir-fry until the seasoning is evenly distributed throughout the mixture.
