If using normal fine besan, sieve it once to remove lumps. You can also add 1–2 tbsp semolina (optional) for slight grainy texture. Good besan = perfect barfi texture. 🔥 Step 2: Roasting the Besan (Most Important Step) Take a heavy-bottom kadai. Add ghee and let it melt on low flame. Add besan gradually and start mixing. Keep flame LOW. Now comes patience 👇 Stir continuously. Initially, it will feel thick and heavy. After 8–10 minutes, it will loosen. After 15–20 minutes, color becomes golden. You will get a strong nutty aroma. ✔ Proper roasting takes around 20–25 minutes on low flame. If under-roasted → raw taste If over-roasted → dark & bitter Perfect roasting = deep golden color + ghee releases slightly. Turn off flame and let it cool slightly. 🍯 Step 3: Making Sugar Syrup In another pan: Add sugar + water. Heat on medium flame. Stir until sugar dissolves. Let it boil. You need 1-string consistency (ek taar ki chashni). How to check: Take little syrup between fingers. When you stretch, one thin string should form. Don’t overcook or it will become hard. 🥣 Step 4: Mixing Everything Now reduce flame to LOW. Add roasted besan into sugar syrup. Mix quickly and continuously. Add cardamom powder. Stir till mixture thickens. The mixture will: Start leaving sides of pan. Become thick and slightly glossy. This stage comes within 2–4 minutes. Do not overcook after mixing syrup. 🧈 Step 5: Setting the Barfi Grease a tray or plate with ghee. Pour mixture immediately. Spread evenly with spatula. Garnish with nuts. Apply silver vark (optional). Gently press toppings. Let it rest for 1–2 hours at room temperature. 🔪 Step 6: Cutting When slightly warm, mark cuts. After fully set, cut into squares or diamonds.
