Calling Thailand "home" is a privilege already, but a day-trip to such a small, locally renowned restaurant is a delight! Unique ideas and a traditional recipe combine with a fun serving style making this day just so memorable. Thank you for hanging out with myself, and my wife Li, we are hungry and excited to learn about "2 Baht Noodles" today with this lunchtime feast in downtown Lampun. "Boat Noodles" are usually served in small bowls, feature a fairly standard set of ingredients (white rice noodles of varying widths, always a meaty broth, usually including either a fresh spicy and/or preserved ingredient adding umami, with both salty and sweet flavor profiles) but they are called "BOAT" noodles because of the traditional serving setting. In the past, when Thailand relied much more on canals and boats, local river networks for daily life transport, lowland cities/towns might even have entire marketplaces being served by people coming in on boats - even vendors who cooked FROM the boat and served customers seated "on land." The serving size would be prepared, at least partially, at home, then brought to the boat, the serving size of small bowls are easier to serve across to the table/seating, and this beautiful recipe develops as we now know it (and love it!) today.
