Telur Balado | Level Up Your Eggs With This Indonesian Spicy Egg Recipe 6 hard boiled eggs 4 cloves garlic, roughly cut 2 shallots, roughly cut 8 red chillies, roughly cut 2 tomatoes, centre removed and roughly cut ¼ cup ikan bills (dried anchovies), rehydrated 6 kaffir lime leaves ¼ cup gula jawa (coconut sugar) 2 tsp salt Peanut oil Add garlic, shallot, chilli, and tomato into a food processor and chop until roughly combined. Heat 2cm of peanut oil in a pan to low medium heat. Add in eggs and fry for around 10 mins until golden. In another pan, heat 1cm of of peanut oil to low medium heat. Add ikan bills and fry for 3-4 mins. Add chilli and tomato mixture, increase the heat to medium, and mix well. Tear and add kaffir lime leaves, gula jawa, and salt, and mix well. Once the mixture starts bubbling, reduce the heat to low medium and continue cooking until most of the liquid has evaporated. Add fried eggs and stir through.
