Aladdin was one of my favourite Disney movies as a child and I'm so excited for the upcoming live-action version. In honour of the new movie, I've attempted to bake a cake that looks like the magic carpet. As you can tell, I don't have a lot of experience with decorating cakes and so this video is perfect for beginners like me who would like to try something new. CHOCOLATE DATE CAKE RECIPE: Ingredients: 2 cups (approx. 40-50) pitted dates 1 1/4 (300ml) hot brewed coffee 2/3 cup (150ml) canola oil (or 1/2 cup + 3 tbsp softened butter) 1/2 cup (100g) granulated sugar 1/4 cup (50g) dark brown sugar 2 eggs 1 tsp vanilla extract 1 cup (120g) flour (I used all-purpose) 1/2 cup (50g) cocoa powder 1 tsp baking soda 1/2 tsp salt 1/4 cup semi-sweet chocolate chips (optional) chopped nuts (optional) 1) Preheat the oven to 350 F 2) Grease a rectangle-shaped cake pan or line with parchment paper 3) In a small bowl, soak dates in hot coffee and set aside 4) In a large bowl, combine oil (or butter), white and brown sugars and beat to combine 5) Add in eggs one at a time and vanilla extract 6) Sift the flour, cocoa powder, baking soda and salt together 7) Mix all ingredients until well incorporated 8) In a food processor or blender, blend the soaked dates until smooth 9) Add date paste and chocolate chips to the batter and mix until well combined 10) Pour batter onto a prepared cake pan 11) Bake uncovered for approx. 40-50 minutes or until done 12) Let it cool in the pan for 10 minutes, then flip upside down onto a cooling rack and cool completely 13) Trim the edges of the cake into a rectangle shape 14) Option to create two layers and fill with a layer of filling 15) Decorate the cake with coloured frosting (purple, gold, red) CHOCOLATE FILLING (optional: if creating 2 layer cake) 1 cup chocolate chips 1/3 cup heavy cream 1) Combine the chocolate chips and cream in a microwavable bowl 2) Microwave on high for 1 minute 3) Stir together until smooth and let it cool for 10-15 minutes before use VANILLA BUTTERCREAM FROSTING: 3 cups (375g) icing sugar 1 cup (2 sticks/227g) butter, softened 2 tbsp heavy cream 1-2 tsp vanilla extract 1/8 tsp salt food colouring (purple/blue, yellow/orange, red/brown) 1) Beat butter in a bowl with an electric mixer 2) Add sugar, 1 cup at a time and mix well 3) Beat in vanilla, cream, salt and food colouring till smooth 4) Fill in a pastry bag and decorate #magiccarpet, #aladdin, #chocolatecake
