Mandarin Cheesecake Crust (Cake): 1/4 cup all-purpose flour 1/4 teaspoon baking powder pinch of salt 2 tablespoons softened butter 1/4 cup granulated sugar 2 tablespoons milk 1/8 teaspoon vanilla extract 1 egg Blend flour, baking powder and salt in a small bowl. Cream butter and sugar together in a medium bowl with an electric mixer. Add flour mixture to butter mixture and blend well. Mix in milk, vanilla and egg. Pour into well-greased 9-inch springform pan. Bake at 350 degrees Fahrenheit for 15 minutes or until light brown. Mandarin Cheesecake Filling: 1 envelope unflavoured gelatin 3/4 cup granulated sugar 1 cup boiling water 1 envelope Dream Whip (or other dessert topping mix) 1/2 cup milk 3 8-ounce packages of softened cream cheese 1 teaspoon vanilla extract 1/4 teaspoon orange extract 1/4 teaspoon lemon juice Orange food colouring Mix gelatin powder with sugar in medium bowl. Add boiling water to gelatin mixture and stir until fully dissolved. Prepare Dream Whip by blending with milk until it forms stiff peaks. In another bowl, whip the cream cheese with vanilla, orange extract, lemon juice and food colouring. Slowly add the gelatin mixture to the cream cheese mixture while beating. Add half of the Dream Whip to the cream cheese and beat until smooth. Pour mixture into springform pan and chill for 2 hours. Mandarin Cheesecake Topping: 2 cans of mandarin orange slices, drained 1/2 cup of mandarin orange slice juice 1 teaspoon unflavoured gelatin Drain mandarin oranges and save 1/2 cup of liquid. Heat liqud in microwave for 1 minute or until hot. Dissolve gelatin in liquid. Mix orange slices with liquid and pour over cheesecake. Chill for 2 more hours.
