Whole Spices (Village Aroma Base) Dry red chilies – 6–8 Coriander seeds – 2 tbsp Cumin seeds – 1½ tbsp Black peppercorns – 1 tsp Cloves – 4–5 Green cardamom – 3 Cinnamon – 1 small stick Bay leaf – 1 Poppy seeds / roasted coconut (optional, rural variant) – 1 tbsp 👉 Dry roast lightly and grind into a coarse paste (stone grinder preferred). Curry Base Mustard oil – 4–5 tbsp Onions – 4 large, finely chopped Ginger-garlic paste – 2½ tbsp Green chilies – 4–6, slit Tomatoes – 2 medium, crushed (optional in deep rural style) Turmeric powder – ½ tsp Kashmiri chili powder – 1 tsp (for color) Village spice paste – all of it Salt – as needed Water – as required Finishing Touch Fresh coriander leaves – handful Green chili – 1 crushed Mustard oil – ½ tsp (raw, optional but authentic) 🔥 Traditional Cooking Method (Step-by-Step) 1️⃣ Heat the Oil (Key Flavor Step) Heat mustard oil in a heavy iron kadai or clay pot. Let it smoke lightly, then reduce heat. 👉 This removes rawness and gives signature village aroma. 2️⃣ Fry Whole Spices Add bay leaf, dry red chilies, cinnamon, cardamom, cloves.
