After 30 minutes of steaming, place the tapioca on a wire rack, and let it cool completely. 蒸锅内放一块蒸笼用的草布或蒸布。把木薯块放在草布/蒸布上。 大火把水煮滚后计时,中火蒸30分钟。 蒸好后沥干多余的水分,静置至完全冷却。 4。Roll the ragi with rolling pin into powder, sprinkle ragi on to the tapioca. 把酒饼用擀面棒压碎,把已冷却的木薯块四周均匀的裹上一层酒饼粉。 5。Wrap the tapioca into banana leaves. 把木薯块包入香蕉叶内: 香蕉叶上下对折。 左右两边往中间推,再把香蕉叶两边的角往中间折进来。用牙签固定好。 修剪上面多余的叶子。 6。OR you may place the tapioca in to a plastic container instead of in the banana leaves 或可以直接把沾满酒饼粉的木薯块,整齐的摆入塑料盒子里后,再均匀的把1/2 - 1茶匙酒饼粉洒在木薯块上,用盖子盖紧。 *尽量不要重叠。 7。 Place the Tapai in to a large pot, and place the pot in a dark cabinet - Let it sit in the cabinet for 48 hours - After 48 hours, you can store the Tapai in the fridge for about 3-4 weeks. 把等待发酵的Tapai放入大锅子里,盖上锅盖,放在隐秘无阳光直射的橱里 - 室温静置发酵48个小时 - 发酵好后可以放入冰箱冷藏保存3-4 个星期 *发酵期间不可把锅盖打开偷看 *吃不完的Tapai可以放入冰箱冷藏保存数个礼拜。
