Hello ☺Thank you for watching my video. A little early today, but a strawberry cake for Christmas. I spread homemade raspberry purée on the roll cake batter and rolled in my favorite mascarpone cream and strawberries. If you put a layer of cream on top of the raspberry purée right after applying it, it will slide and become very difficult to roll, so it is best to apply it after the roll cake batter is roughly heated and let it dry on the surface☺. I used a 37.5cm x 24cm rectangular roll cake mold this time, but the same amount can be made in a 27cm x 27cm square one. In the case of a square, cut the dough into 4 equal pieces to make it just the right size. A few drops of vanilla essence can be substituted for the vanilla extract. ▷Ingredients: ■Roll cake dough 4 egg yolks 30 g rice oil 30 g milk 50g rice flour 4 egg whites 80 g granulated sugar Raspberry purée 50 g frozen raspberries 20 g granulated sugar 1 tbsp lemon juice Mascarpone cream 200 ml heavy cream 100 g mascarpone cheese 25 g granulated sugar 1 tsp vanilla extract 1 pack of strawberries ▷How to make: 1. Beat the egg yolks with the oil and milk, in that order. 2. Add rice flour and mix well until smooth. 3. Add granulated sugar to the egg whites in 3 batches to make a meringue. 4. Add a scoop of meringue to ② and blend. Mix the remaining meringue and batter until evenly combined. 5. Bake in a preheated oven at 180℃ for 12 to 15 minutes. 6. Immediately remove from the baking sheet, cover with paper and let cool for 10 minutes. 7. Mix all the ingredients for the raspberry purée and heat in a microwave oven at 500W for 1 minute at a time (microwave is recommended because the amount is small). Repeat heating 2 or 3 times until lightly thickened. 8. Spread a thin layer of raspberry purée on the cake rolls with the browned side down, and let the surface dry without covering with plastic wrap. 9. Add the mascarpone cheese, sugar, and vanilla extract to the heavy cream and whip to stiff peaks while chilling in ice water. 10. Rinse the strawberries well, separate the clean ones for decoration, and cut the rest into 1 cm cubes. 11. Cut the roll cake dough into 3 equal pieces (about 7 cm wide). Spread the cream, place the strawberries on top, and roll up from the edge. Cut off the dough at an angle at the end of the roll to make it easier to roll. 12. Brush the surface of the cake with heavy cream and arrange the strawberries on top.
