This recipe is Funeral of a Cowboy, my clone version of "Death of a Cowboy" pale ale. The original beer’s brewed Chelmsford Brewery, who are located in Chelmsford, in Essex, UK. DoaC is 4.7% and well-known for being a super hoppy, refreshing pint with fruity, tropical notes and a balanced malt profile. The beer uses a heavily loaded whirlpool hop addition, which also imparts some IBUs and a complimentary dank hint. The 60 minute bittering hop is 9 IBU's to give enough bitterness to balance the beer. DoaC is seen as a summer sipper, but I like to keep it on tap all year round. Key Characteristics: BJCP Style: 18B - Pale Ale ABV: 4.7% BJCP Judging notes: Aroma : Medium, sweet brioche crust and dominant medium-high juicy fruit salad with a low-medium dank background. The hop aroma is filled with medium-high soft-fleshed tropical fruits and citrus. There are notes of: fleshy mango, peach and lychee. And orange and lemon peels. Appearance: Pours a hazy orange with a persistent foamy white head. Flavour: A medium-low malt sweetness comes with brioche crusts, with medium-high tropical and citrus flavours of mango, peach, lychee, and orange & lemon peel. There’s also a low dank, grassy background note with a medium clean, bitterness to finish. Mouthfeel: Medium-light body and moderate carbonation for easy-drinking. Overall impression: A refreshing, well-rounded pale ale, with a strong hop presence. In essence, this recipe creates a flavourful, hop-forward pale ale that's not overly complex.
