Welcome to Brooke's kitchen as I work to fill my freezer with homemade snacks and meals. These from scratch freezer meals are so easy to grab and go, which is perfect for busy days or days I don't feel like cooking. In today's video, we are making homemade biscuits, chocolate chip cookie dough, plain bagels, breakfast sandwiches, and pizza. Biscuit Recipe (can be stored for 6 months): 1 ½ cups heavy cream 2 cups all-purpose flour 1 tbsp baking powder ½ tsp salt To bake from frozen: Let thaw in fridge overnight. Set oven to 500ºF after thawing. Bake 10-12 minutes and let cool. Bagel Recipe (can be stored for 12 months): 3 ½ cups bread flour 2 ¼ teaspoons instant dry yeast 1 ½ tablespoons sugar 1 ½ teaspoons salt 1 ⅓ cups warm water Add Honey to water when boiling! To bake from frozen: Fully defrost bagels prior to baking by putting them in the fridge overnight. Preheat your oven to 400ºF (make sure oven is fully pre-heated prior to baking). Bake your bagels between 4-5 minutes depending on your oven. English Muffin Recipe: ½ cup warm water 2¼ tsp instant dry yeast 2 tbsp granulated sugar you can use raw sugar 2¾ cups all-purpose flour 1 tsp salt ⅔ cup milk 2 tbsp butter melted, cooled (I used salted but you can use unsalted as well) Cornmeal DO NOT FREEZE WITHOUT BAKING! To unthaw breakfast sandwiches: Remove plastic wrap and wrap with paper towel. Microwave for 1 minute on defrost or 50% power. Flip the sandwich over and microwave for 30 seconds- 1 minute on high power, until warmed through. Chocolate Chip Cookie Dough Recipe: 1 ⅓ cups all-purpose flour ½ tsp baking powder ½ tsp baking soda 2 tsp vanilla extract ½ melted salted butter ½ granulated sugar ½ light brown sugar 1 ½ cups semi-sweet chocolate chips To bake from frozen: Preheat oven to 375ºF. Bake for 13-15 minutes. Pizza Dough Recipe: 1½ cups warm water or milk whey (I used whey in this video) 2¼ tsp active dry yeast 1 tbsp granulated sugar 2 tsp salt 3 tbsp olive oil 3¾ cup bread flour OR all-purpose flour To bake from frozen: Preheat the oven to 450°F and place a flat baking tray/pizza stone on the bottom shelf of the oven to also pre-heat. Unwrap your frozen pizza and immediately slide it into the pre-heat oven onto the tray. Bake for roughly 12 minutes, until golden brown and bubbly.
