The perfect mix of red velvet, cheesecake & raspberry jam. 📝 Full Recipe 📌 Ingredients 🔹 For the Dough: • 115g butter (softened) • 100g brown sugar • 80g granulated sugar • 1 egg • 1 tbsp vanilla extract • 1 tsp red food coloring (adjust as needed) • 225g all-purpose flour • 10g cocoa powder • 10g cornstarch • 4g baking soda • 1g baking powder • 1/4 tsp salt • 100g white chocolate (chopped) • 100g mixed chocolate chips (milk & dark) 🔹 For the Cheesecake Filling: • 100g cream cheese (softened) • 15g powdered sugar • 1 tsp vanilla extract 🔹 For the Raspberry Jam: • 100g raspberries • 2 tbsp sugar • 1/2 tsp cornstarch • Store-bought raspberry jam (use as needed for filling) 📌 Instructions 1️⃣ Prepare the Fillings: • Cheesecake Filling: Mix cream cheese, powdered sugar, and vanilla until smooth. Scoop into small balls and freeze for at least 2 hours. • Raspberry Jam: If making homemade jam, heat raspberries and sugar on low heat until soft. Mix cornstarch with a tiny bit of water and stir in to thicken. Cool and refrigerate. If using store-bought raspberry jam, simply have it ready to pipe into the cookies. 2️⃣ Make the Dough: • Cream butter, brown sugar, and granulated sugar until fluffy. • Add egg, vanilla, and add red food coloring until you get the perfect color. Mix well. • Sift in flour, cocoa powder, cornstarch, baking soda, baking powder, and salt. • Mix until just combined, then fold in chopped white chocolate and mixed chocolate chips. 3️⃣ Assemble the Cookies: • Take 120g of dough, flatten it, and place 1 large or 2 small frozen cheesecake balls inside. • Pipe store-bought raspberry jam on top of the cheesecake ball. • Seal the dough and shape it into a round ball with a slight tip at the top. • Freeze for at least 2 hours before baking! 4️⃣ Bake the Cookies: • Preheat oven to 180°C (350°F). • Place the baking pan inside while preheating for even baking. • Once hot, place frozen cookies on the pan and bake for 12-16 minutes (16 minutes was perfect for me!). 5️⃣ Shape & Decorate: • Immediately after baking, use a cookie cutter to swirl each cookie into a perfectly round shape. • Press extra chocolate on top while warm for a gooey finish! 💡 Notes & Tips: ✔ Freeze for at least 2 hours – keeps the cookies thick and prevents the filling from leaking. ✔ Use frozen fillings – helps the cheesecake stay creamy and the jam intact. ✔ Bake on a hot pan – ensures even baking and a better rise. ✔ Adjust red coloring – add until you get the perfect red color. ✔ Want extra gooey cookies?
