Hi and welcome if you’re new - welcome back if you’re a regular! Here’s my chilli con carne and corn bread muffins for dinner. Recipes taken and adapted from: @rebeccawilsonfood https://www.instagram.com/rebeccawils... And @aussiedebtfreegirl https://www.instagram.com/aussiedebtf... Chill con carne (baby/kid friendly): Sunflower oil 1 onion diced 500g beef mince 2 tbsp tomato paste 1 tsp dried mixed herbs 1/2 tsp cumin 1 1/2 tbsp Worcestershire sauce 1 tbsp smoked paprika 1 beef stock cube 1 can chopped/diced tomatoes 1 can red kidney beans Heat oil in pan and cook onion until soft, then add the beef mince and tomato paste and cook until mince is brown. Add herbs and spices, Worcestershire sauce and stock cube and mix, cooking for a few minutes. Add in the tomatoes and then fill the tomato can half way with water and add to the mix. Use a fork to squish and smooth the kidney beans to a paste, add to the mix and turn the heat down and let simmer for 10 mins. Corn bread muffins: 1 cup cornmeal (polenta) 1 cup self raising flour 4 tbsp sugar (I used caster sugar) Pinch of salt 50 gm butter melted 1 cup milk 2/3 cup grated cheddar cheese Mix all ingredients together and leave to sit for 10 min before putting in muffin tray and then oven at 180 degrees until golden and cooked through.
